Sweet-scented Osmanthus Glutinous Rice Lotus Root
1.
Bamboo sticks, without it, the honey lotus root will fall apart and become honey soup~Of course, children's shoes that can't find this kind of bamboo use toothpicks or bamboo sticks instead.
2.
The material is very simple ~ two thick and short lotus roots (mine is not thick enough, the thicker the hole inside will be bigger), of course there are glutinous rice hidden in the lotus root (this glutinous rice was bought by my mother, not quite Okay, it's mixed with rice. When you buy glutinous rice, please take a good look~) In fact, only half of the glutinous rice was used in the end. By the way, just wash the glutinous rice and let it dry. You don't need to soak it.
3.
Wash the lotus root without peeling it. The pits and pits like lotus root joints are not easy to wash, but it can be cleaned with a toothbrush.
4.
There are small holes in the bottom of some lotus roots~ You may be worried that the glutinous rice will leak out~ What should I do? In fact, the solution is very simple. Secret 1: Grab the lotus root vertically and mash it back and forth on the table, so that the small hole at the bottom will be blocked by the mashed lotus root, and the glutinous rice will not leak out. (Attention! Don't use too much force, otherwise it will not be the bottom of the lotus root clogging the small hole. It is estimated that a boy with a strong hand can break the entire lotus root)
5.
Make a diagonal cut on the top of the lotus root, which is convenient for stuffing the glutinous rice immediately. Don't cut too hard or the hole on the other side will be smaller.
6.
The other is also cut diagonally.
7.
Then find a cup that can be stuffed with the lotus root, put the lotus root in it upright, the beer mug that my father used to drink tea.
8.
Mix the glutinous rice, add sugar to the glutinous rice according to the sweetness you like, and then mix well. You can mix a little less first, then mix it when it's not enough, so that it won't be easy to leave. There are also dry glutinous rice that is not mixed with sugar immediately below it is also useful.
9.
My secret weapon~Secret three: piping bag! It is very convenient to use this to fill glutinous rice, and the method is very simple. First, reduce the opening of the piping bag. This opening cannot be large or small. If it is too large, it will not fit in the small hole. The specific size depends on the size of your lotus root hole, just take an average value. Then insert a chopstick into the piping bag, put the piping mouth in the lotus root hole, and poke it in with the chopsticks so that the glutinous rice can easily go in.
10.
It is still pressed while poking, so that the glutinous rice inside will be firm when it is cooked. (Because the living room is too hot, I switched to the bedroom. There is air-conditioning in the bedroom)
11.
Three: When stuffing glutinous rice into this kind of small hole, you can use chopsticks to poke the hole to make it easier to stuff it immediately. By the way, the dried glutinous rice becomes sticky because of the sugar in the glutinous rice. It is very inconvenient to plug the small holes. At this time, the dry glutinous rice that has not been mixed with sugar just plays a big role! Because the glutinous rice is dried in advance, the glutinous rice can slip into the hole easily.
12.
Fill the lotus root that was cut just now with glutinous rice.
13.
Finally, the clean bamboo poles were inserted and fixed, and I inserted 3 of them.
14.
I processed this bamboo rod in advance. I brushed it with a toothbrush, soaked it in salt water, and boiled it in boiling water, so it was very clean. Remember~ the end of the lotus root must be sharpened, and it is convenient for the last poke.
15.
Don't cut the last little handle so that the bamboo poles won't come out when you cook.
16.
Both are filled, the one on the left is from my mother and the one on the right is from me. Obviously, my mother is very greedy.
17.
Put the lotus root filled with glutinous rice in the pot and pour water into it, so that the water can flow over the lotus root.
18.
Put the lid on and bring to a boil on high heat. (You read that right, this is the inner pot of the rice cooker, because the rice cooker is broken, so I only use the inner pot for cooking porridge or something)
19.
After boiling, pour the water and lotus root into this kind of purple clay soup pot. Because our pot has less power than an electric rice cooker, it is very suitable for braising.
20.
Put sweet-scented osmanthus sugar, 4 spoons of this kind of spoon, this spoon is not very deep and shallow, it is the kind used for meals.
21.
4 spoons of rock sugar.
22.
I started to cook it at high temperature for 6 hours.
23.
Later, the water dries, and water is added until the water exceeds the lotus root. Finally, the automatic gear is adjusted and it is boiled for another 5 hours. I cooked it for 11 hours from 8:30 last night to 6:30 this morning. Regardless of the long time, in fact, you only need to add water once in the middle of the journey. It is recommended that you cook this after 9pm, because the electricity bill is half price after 9pm to 8am the next day. Of course, if you use gas to cook, you don’t have to wait until after 9 o’clock. If you think the cooking time is too long, you can cook it in a pressure cooker. It only takes 30 to 40 minutes to cook. However, we never touch a "heavy weapon" like a pressure cooker in our family, so let me play with my "light weapon" honestly.
24.
Dangdang~ it's cooked~ the color is red.
25.
After it's cold, slice it~ I have to give it a try.
