Sweet Strawberry Jam

Wash the strawberries and set aside

Cut one strawberry into quarters and put it in the pot

Add granulated sugar to the strawberries and turn on medium heat

Stir while boiling, turn to high heat immediately when the sugar is completely melted, and skim the surface foam

Stir properly while boiling, turn off the heat immediately when the liquid volume becomes smaller, the color becomes darker, and the temperature reaches 103°-105°

After turning off the heat, immediately pour it on a large plate and let it cool (you can store it in a clean baking pan), and store it in a can and sealed
Tips:
1. The amount of sugar is preferably 60% of strawberry
2. After the sugar is melted, the fire must be turned on immediately, so that the color of the jam will not turn black and it will be beautiful. Of course, you must use a larger and deeper pot to boil the jam, because the volume of the jam in the pot will expand greatly after turning to high heat.
3. It doesn't matter if you don't have a thermometer for measuring liquids and can't grasp the state of 103-105 degrees. It takes about 15 minutes to boil 1 catty of strawberry jam. When the temperature of the jam reaches 100 degrees, it will not rise for a long time. When you see that the volume of the liquid in the pot is reduced to less than 1/2 of the highest point, the color is obviously darker, and when you smell a faint caramel flavor, stir and boil it for about 1 minute.
