Sweet Walnut Small Square Puff Pastry
1.
Bake the bottom part of the pie first. Pour the low flour, butter and granulated sugar in the main ingredients into a bowl, then knead vigorously with your hands to fully mix the flour and butter to form a uniform and loose powder.
2.
Pour in the beaten egg liquid
3.
Use a spatula to mix evenly into a batter, which will be a bit sticky at this time
4.
I used a 18X18 cm square baking pan to make it, so I put a layer of tin foil on the baking pan in advance to prevent sticking. You can also apply butter to the inner wall of the baking pan for easy demoulding.
5.
Spread the batter evenly into the baking tray. Because it is very sticky, I flatten the batter directly with my hands. Spread the batter on all four corners. Try to make the batter evenly distributed and the surface is level.
6.
Put the baking pan into the middle layer of the preheated 175℃ oven, bake for about 18 minutes, until the surface is light golden brown, and then it is out of the oven.
7.
Let’s make the walnut filling again. Put the walnuts in the middle of the oven at 175°C and bake for 10 minutes. The surface will turn golden yellow and smelly. Then chop the roasted walnuts with a knife. Better
8.
Pour the granulated sugar, butter, honey and whipped cream in the auxiliary ingredients into the pot, then heat over medium heat, stirring constantly
9.
After boiling, turn to low heat and continue to cook for 6-8 minutes. When the color becomes darker and there is a slight caramel color, turn off the heat immediately
10.
Remember to simmer on a low heat and stare at all times, otherwise it will be easy to paste, and the sugar will not taste good if it is caramelized.
11.
Immediately pour the chopped walnuts into the cooked mixture, stir quickly with a spatula
12.
Pour the walnut filling on the bottom of the baked pie and smooth it with a spatula
13.
Put it back in the middle of the oven, still at 175℃, bake for about 8 minutes and it will be out.
14.
After it is out of the oven, let it cool for about an hour, and then pull the tin foil around and lift it out of the mold. When it’s cool, cut it into small pieces and eat it.
Tips:

2. Walnut kernels must be roasted before they are cooked for better taste;
3. Maple syrup can also be substituted for honey;
4. The amount of sugar can be adjusted by yourself.
