Taihu Silver Fish Soup

All ingredients are washed and ready.

Dice zucchini.

Dice the tofu and beat the egg.

Wash the fungus and dice after soaking.

Heat the soup pot, pour in the cooking oil, add the green onion and ginger to the oil and sauté.

Pour in the diced zucchini, stir fry, and add some salt.

The zucchini changes color slightly, pour in fungus and stir fry.

About half a minute, you can add whitebait and stir fry for a while (whitebait meat is tender and needs to be turned gently.)

Add an appropriate amount of water for about half a minute.

Pour in tofu and cook with water.

After the water boils, roll for a while, then pour the beaten eggs, stir them into egg flowers with chopsticks.

Finally, add water starch to thicken, add chicken essence, sprinkle with coriander leaves, and turn off the heat.
Tips:
1. You can also add sliced ham to make the soup more delicious.
