I usually buy raw salted duck eggs for egg yolks. Now knock...
Wash the thin transparent film on the outside of the egg yolk.
If the yolk is bigger...
You can bake at 180 degrees for 5 minutes!
During the roasting process, if you see oil coming out.
Don't bake it!
Don't bake it for too long.
Don't say the oil is baked. The aroma is gone!
At least... the yolk is not easy to wrap!
If using vacuum egg yolks.
You can spray alcohol, because it will be fishy.
If the quality of the yolk is not good, you can soak it in oil and bake it!

I made 7 packs of 3. stuffing according to the skin!
So... put the egg yolk on the electronic scale.
Put on the stuffing. The total weight is 52.5 just fine!

Press into a small bowl..

Put it in the oven again...180 degrees. Bake for about 12 minutes!
Guard the oven for the last few minutes.
See that the color is darker.
The moon cakes are bulging up all around.
Both can be turned off immediately. Take it out!

Usually after letting cool, sealed and stored.
It's best to eat back after 2 days!
Tips:
The mooncakes just baked are hard. They don’t look good!
After returning the oil, it becomes soft. The color is also good!
If you think 3:7 is not easy to operate.
You can do it 4:6!
The stuffing should be less!
