Menu
Pickled Duxian, a specialty of Wuyue in the south of the Yangtze River, is now one of the representative dishes of Shanghai local cuisine, Subang cuisine and Hangzhou cuisine.
"Pickled" refers to salted bacon; "Xian" refers to fresh meat (pork belly, hoof, small ribs, etc.); "Bull" means simmered over a small fire.
