Three-color Golden Egg
1.
Prepare 4 eggs, 2 salted duck eggs, 2 preserved eggs
2.
Put the preserved eggs and salted duck eggs in boiling water and cook for 5 minutes
3.
Salted eggs and preserved eggs shelled
4.
Preserved eggs and salted eggs cut into 1 cm cubes
5.
Shell the eggs, separate the egg whites and yolks in 2 small bowls, don’t stir the egg whites, stir the yolks a little
6.
Take a glass bowl and spread the preserved eggs and salted duck eggs flat
7.
Pour the egg whites and gently shake the bowl to allow the egg whites to flow evenly into the gap between the preserved eggs and the salted duck eggs. Don't stir them, or the gray in the preserved eggs will be brought out.
8.
Boil a pot of boiling water, put it in a glass bowl with egg mixture, and steam for 5 minutes on high heat
9.
Pour the egg yolk in the glass bowl, put it back in the pot and continue to steam for 10 minutes
10.
Take the steamed three-color eggs out of the mold and let them cool, cut into cubes, any size
11.
Tips:
Because salted duck eggs are relatively salty, there is no need to add salt. If the taste is really heavy, you can dip a little light soy sauce to taste
