Three-color Snowy Mooncakes, Make Them with Your Children, They are Soft and Delicious
1.
First make the matcha green dough, sift all the flours together (20g glutinous rice flour, 10g orange powder, 20g powdered sugar, 20g sticky rice flour, 4g matcha powder)
2.
Add all the liquid (75g milk, 1 tablespoon condensed milk, 8g vegetable oil)
3.
All raw materials are mixed evenly and set aside.
4.
The raw materials of the three colors of dough are the same. Just remove the matcha powder from the white dough, and replace the pink dough with 3 grams of red yeast rice powder.
5.
Steam in water for 10-15 minutes, then take out the chopsticks and stir vigorously for a while without any liquid.
6.
After a little cooling, put it in a bag with a little oil, knead until the dough is smooth, let it cool and set aside.
7.
The three-color dough is operated in the same way once, let cool and set aside.
8.
70g cooked noodles (fried glutinous rice noodles until slightly yellow), let cool and use as hand noodles.
9.
My mold is 50 grams, so the outer skin is 25 grams and the inset is 25 grams (the inset can be freely combined)
10.
Red bean paste, lotus seed paste fillings, etc. can be used for inset. Add whatever you like.
11.
Knead it into a ball shape, and paste the cooked powder that has just been fried.
12.
Press molding with a mold.
13.
Brush off some cooked powder on the outer layer.
14.
Finish, take a picture.
15.
It will taste better if refrigerated for a period of time.
16.
But my combination of colors feels really earthy.
Tips:
If you don’t want to steam it in a pot, you can use a microwave oven. Put the liquid in the microwave, take it out and stir it after 1 minute, and then repeat the operation for 1 minute until there is no liquid.
