Today we are going to make the mainland version of Taiwanese three-cup chicken. The essence of the three-cup chicken lies in the three-cup ingredients: a cup of oil, a cup of wine, and a cup of soy sauce. Because I didn’t buy basil, I can only cook it, so this dish can only be a copycat version, but it’s still delicious, it just doesn’t have the unique fragrance of basil. Next time if you encounter basil leaves, Remember to buy it and make authentic Taiwanese three-cup chicken that night!

Three Cups Chicken

1. Wash the roots of the chicken wings and draw a knife on each side. It is easier to taste when cooked

2. Slice green onion, cut ginger and garlic coarsely

3. Add oil in a hot pan, add 1 tablespoon of vegetable oil and 2 teaspoons of sesame oil, add green onion, ginger, garlic and stir fry until it is fragrant.

4. Add chicken wing roots and fry on low heat until golden on both sides

5. Add 2 teaspoons of light soy sauce, 2 teaspoons of dark soy sauce, 3 teaspoons of cooking wine, turn on high heat, boil and cook for 2-3 minutes

6. Then add water to the chicken wings, bring to a boil, cover with a lid and cook for 10 minutes

7. Add the beans, boil over high heat, and cook for 10 minutes on medium heat

8. Add potatoes, boil on high heat, cook on medium heat for 10 minutes, and check the situation after 10 minutes. The potatoes must be yellow-green and very soft. The potatoes must also be very soft to be considered OK. If it does not reach it, you need to add a little more water. Continue to burn, and finally collect the juice from the fire
