Three Ways of Lotus Root

Wash the purple cabbage and cut into small pieces. Put it into the food processor, pour a bowl of cold boiled water, break it and filter it to get the juice, put a small spoonful of white vinegar, it will instantly turn pink. Lotus root, wash with clean water, and slice. Take a container and put honey. Pour the purple cabbage juice into the honey and stir well. Soak the lotus root slices. One hour later, take it out and serve on a plate.

Wash the glutinous rice, add water and sugar to soak overnight, drain and set aside. Brush the lotus root with mud, peel and wash it, and cut it about 5cm from the thick end. Fill the glutinous rice into each hole of the lotus root. It does not need to be too tight. The glutinous rice will swell slightly during the cooking process. Cover the cut lotus root and fix it with a toothpick. Put the lotus root in the pressure cooker, add the water that has not passed the lotus root body, and add three spoons of brown sugar. After the pressure cooker is aired, take it out of the pot and let cool and slice it for 20 minutes. Take out a little brown sugar water of boiled lotus root, put it in another small pot, add sugar, and cook the sugar juice until it is thick. It can be dipped when eating.
