Tofu nao is also one of my favorite breakfasts. I used to think it was so difficult, but after I did it, I found it was really simple and nutritious. You can change the bittern as you like. Tofu brain is not only delicious, but also very nutritious. The main ingredient of tofu brain is soybeans. The protein content of 500 grams of soybeans is equivalent to 1500 grams of eggs, or 6000 grams of milk, or 1,000 grams of lean pork. And it is rich in vitamins and minerals. Therefore, soybeans are praised as the "king of beans" by people.
Soybeans do not contain cholesterol, and can lower human cholesterol, reduce the occurrence of arteriosclerosis, and prevent heart disease. Soybeans also contain a substance called pancreatin, which has a certain effect on diabetes. Therefore, soybeans are recommended by nutritionists as an ideal health care product for preventing and treating coronary heart disease, hypertension and atherosclerosis. The soft phospholipids contained in soybeans are an important part of the brain cells. Often eating soybeans has an important effect on increasing and improving brain skills.

Tofu Brain

1. Wash the soybeans and soak the night in advance

2. The fungus is washed with starch one night in advance and soaked

3. Pour the soaked soybeans into the soymilk machine and press the whole beans

4. Cut lean meat into small cubes, add starch, a small amount of salt, soy sauce, and cooking wine to marinate for a while

5. Chopped fungus

6. Make the cooked and sieved, don't throw the bean dregs, you can make a lot of delicious

7. Use a small bowl with a small amount of cold boiled water to rinse out the lactone, and then flush the sieved soy milk through the bowl containing the lactone in a rushing manner. Don't stir it anymore, cover it and put it in a warm place and wait for 20 minutes

8. Let’s cook the marinade, add oil in the pan, add the chopped green onion and saute

9. Add the diced meat and fungus and stir fry

10. Stir-fry until the diced meat changes color and the fungus pops up, add soy sauce and dark soy sauce to mix, pour in water and bring to a boil

11. Add salt and water starch after opening

13. The tofu brain is ready, because there are bubbles when it is poured, and when I scoop it, there are bubbles too, hehe

14. Prepare chili oil

15. Mashed garlic and boiled in cold boiled water to make mashed water

16. Top it with marinade, garlic, chili oil, and start eating

Tips:

1. The amount of soybeans is twice the usual amount of soy milk;
2. The amount of lactone is 500 grams and 1.25 grams, my soy milk is more than 1,400 grams, I used 4 grams, but it is good, there is no acid;
3. The bittern is saltier than usual;
4. Slowly pour the starch while pouring the water, and stir to the proper consistency.
