Tofu Brain

1. The lactone is melted with 15ml of cold water for later use.

2. Put the soy milk in a pot and cook on a low heat to about 85°. (I'm too lazy to squeeze soy milk, I bought it at the place where tofu is made, or I can squeeze soy milk by myself, it's better to be thicker)

3. Pour the boiled soy milk into a container containing lactones. (Be careful to pour from a high place, you can mix the lactone and soy milk evenly)

4. Skim off the foam on the surface of the soy milk, and then keep it warm for 15-20 minutes until the soy milk solidifies.

5. Mix the leek flower sauce with cold boiled water according to 1:1, add an appropriate amount of light soy sauce; mince mustard and chopped green onions.

6. Use a spoon to put an appropriate amount of tofu brain into a bowl.

7. Add leek flower juice, chopped mustard and chopped green onion.

8. Drizzle appropriate amount of sesame oil.

9. If you like spicy food, add some red oil.

Tips:

After the soy milk is washed into the lactone, it must be kept warm.
