Tofu Dipped in Water

Soak the soybeans in water before going to bed

Use an old-fashioned juicer to make raw soy milk

Pour it on a drawer, spread it with cotton cloth, and place a pot for soy milk underneath.

Squeeze the tofu residue, don't throw it away, it can be used as a steamed bun

Boil the soy milk in the pot

Bring to a boil for a few minutes, then turn off the heat and let cool. When it reaches 8, 90 degrees, start to bite the tofu

Slowly pour in the mixed salt and brine, stir the soy milk with your right hand, and stop stirring when you see the bean curd appears.

Cover the lid and let it stand. After 30 minutes, you can press the tofu.

Wet the cotton cloth with water, spread it on the tofu mold and press it flat by hand

Pour the tofu into the tofu mold spread on a damp cloth

Fold the extra cotton cloth on top of the bean curd

Put on the lid of the mold and press a water bottle on it (I heard that the heavier the press, the older the tofu will be)

Just press it for half an hour, remove the four frames of the mold

Open the cotton cloth and pour out the tofu

I use less soy milk, so the cooked tofu is so thin, I will use more soy milk next time

Prepare some garlic and use garlic tongs to make garlic paste

Tips:
The bittern used to make tofu is poisonous, so people with children at home must keep the bittern away. In addition, I follow the instructions in the tofu mold for the proportion of the bittern used to make tofu. If there is any remaining bittern, be sure to mark it. It's easy to explain, it's best to use large characters, don't use the wrong place, then it is very dangerous, remember.
