Tofu Flower [first Taste Diary]

Soak the soybeans overnight and rinse off.

Pour soybeans and water into a blender and beat into soy milk.

Filter out the bean dregs with a filter cloth.

Pour the soy milk into the pot and heat it over medium heat. Stir the bottom from time to time to check if there is a paste.

While the soy milk is heated, add the lactone to 10ml of water and stir evenly.

Turn off the heat when the soymilk is boiling, and wait for the soymilk to cool to 80-90 degrees.

Add the lactone water and stir two or three times.

Cover the lid and let it sit for 7 minutes to form.
9.
Scoop out the tofu flowers, stir in ginger brown sugar water or other favorite sauces and start eating!
Tips:
/By-products/
After making homemade soy milk, you will get another nutritious by-product! That is bean dregs. Don't think it is useless. It also contains many nutrients such as protein, fat, calcium, phosphorus, iron, etc. It can be made into many delicious foods! For example, bean dregs pork meatballs, bean dregs pancakes and so on.
/Temperature&Stirring/
1. One of the main reasons for the formation of tofu flowers is that it depends on the temperature of the soy milk. Therefore, after the soy milk is cooked, do not add the internal fat water immediately, and let the temperature cool slightly to 80-90 degrees before adding it.
2. For those who don't have temperature, you can turn off the boiled soy milk, open the lid and leave it for 2-3 minutes before adding lactone water.
3. Don't stir too much after adding the lactone water, just stir 2-3 times.
