13. Weigh 4.2 grams of lactone in a basin, and then use 10 grams of boiling water to dissolve the lactone.

14. After the soy milk is boiled, pour it into a basin containing the melted lactone.

16. We boil the remaining soybeans while standing still. (Please note that this is used as a side dish in the tofu brain at the end, not cooked soybeans to make the tofu brain. Remember.)

Tips:

1 Pour the boiled soy milk into the bowl with the melted lactone. It is better to raise it slightly and smash it. After the pouring, don't stir it, just cover the lid.
2 Pay attention to heat preservation when standing still. My house is very hot, so keep it at room temperature. If your house is not heated and very cold, just sit the basin in warm water.
3 The ratio I made this time is 250 grams of soaked raw soybeans, 1400 ml of water, 4.2 grams of lactones are dissolved with 10 grams of boiling water.
