1. Wash the toon and remove the stems, as long as the toon leaves are scalded with boiling water.
2. Beat the eggs into the plate.
3. Pour the blanched toon into the eggs, add salt, and stir well.
4. Put the salad oil in the wok, heat up, pour in the egg liquid, and fry until golden on both sides.
5. Slide the fried eggs into the plate and cut a few slices of red sausage to decorate.
