Toon Omelette
1.
Prepare all the ingredients. Cut off the old roots and old leaves of the toon, leaving only the shoots, soak in light salt water for ten minutes, and then rinse again. Toon grows in the wild. In addition to dust, there are some insect eggs and bacteria. Directly blanching them can only scald them to death, but cannot completely remove them. So before blanching, soak them in light salt water, it will be good. Clean it up.
2.
Put an appropriate amount of water in the pot, bring the water to a boil over high heat, and blanch the toon in boiling water. The blanching time does not need to be too long, about two minutes will do.
3.
Take out the blanched toon, put it in cold water, squeeze the water, and then cut it into small pieces with a knife. Finely chop the stems, and do not chop the leaves too much.
4.
Knock the egg into a bowl, add 1 teaspoon of fine salt, and beat with chopsticks until it is smooth and smooth.
5.
Put the cut toon into a bowl of egg mixture, and mix well again.
6.
Put a little cooking oil in the pan, heat it on a low heat, pour in the toon egg mixture, shake the pot, let the egg mixture cover the bottom of the pot.
7.
Pay attention to the heat, keep a low heat and fry slowly. After frying until the egg mixture on one side has solidified, turn it over until golden on both sides. After the pan is cut into small pieces and put in a plate, it is ready to serve.
Tips:
1. Toona sinensis contains nitrite, especially the nitrite content in the old leaves of toona sinensis is higher. When choosing toon, you must choose fresh shoots, and must be blanched in boiling water before cooking. Blanching water can remove the nitrite in the toon, avoid nitrite poisoning, and eat more at ease.
2. My frying omelette is thicker. If you like to eat pancakes, you can fry them twice.
