Toon Scrambled Eggs

This is the 18th year of the toon season. I blanched the toon and kept it frozen, took it out of the refrigerator, and thaw it naturally. Those who are interested can check my recipe "Cryopreserved Toon"

After the natural thawing, the color of toon is still so emerald green, and it is very well preserved. Cut off the roots

Cut a one-centimeter long section (unlike the one shown in the picture, it is actually cut into small sections, but unfortunately I didn’t take the picture, so I replaced it with this one when making toon omelette)

Beat three eggs into egg liquid

Pour oil into the pan and heat it up. The oil can be slightly more. Pour in the egg liquid. When the egg liquid is fluffy, stir fry and shovel into small pieces.

Add toon and stir-fry quickly evenly

Season with salt

Stir evenly out of the pot.

The finished product, it feels very delicious to eat this season.
Tips:
1. Toon is blanched and frozen, and then fry after thawing, the frying time does not need to be long
2. Toon contains a lot of nitrite, so it must be blanched and eaten.
