Traditional Sweet Wine (glutinous Rice), Drink with Eggs and Red Dates
1.
Wash the glutinous rice 2-3 times to remove the starch on the surface
2.
Soak all night
3.
When the glutinous rice is soaked so that it can be squeezed into a powder, remove the glutinous rice and prepare it for steaming.
4.
Use chopsticks to poke a few holes and insert the glutinous rice into it, so that it can be cooked thoroughly and then steamed on high heat for an hour
5.
In the process of waiting, blanch all tools with boiling water to avoid bacteria and promote better fermentation success.
6.
Insert the glutinous rice with chopsticks. When there is no sound of rustling, the glutinous rice is steamed. Then pour 3 kg of [cool white open] into 4 kg of glutinous rice. Attention! When pouring cold boiled water, be sure to pour it and mix well, don’t pour it all at once
7.
After waiting for it to cool down, test the temperature of the glutinous rice with your hands. If you can feel a little temperature with your hands, it's fine.
8.
Pour 12g of koji, and mix well (when putting koji, the temperature must be certain, not higher than human body temperature, if it is too hot, it will burn the koji inside. If it is too cold, the fermentation will not be successful)
9.
Squeeze it tight
10.
Make a hole in the middle
11.
Cover with plastic wrap
12.
Put the bowl of glutinous rice into a container with a temperature of about 25° and wait for 3-4 days to ferment. The hot water bottle is covered with a large layer of quilt at the end, and the quilt is pressed and compacted with the lid to ensure that no wind can penetrate)
13.
If you want to keep the sweet wine for a longer time, pour the sweet wine into a tank and seal it, steam it on the pot for 5 minutes. After high temperature sterilization, it will stop fermenting, and then put it in the refrigerator for a year. Same as the first time
14.
When it’s done, make a sweet wine for my grandma
15.
Pour the sweet wine, add some brown sugar, stir and melt it, wait until it boils, then pour in the egg liquid, stir while pouring and wait until the eggs are floating, then add the wolfberry
16.
While eating glutinous rice cakes with my grandma and drinking sweet wine, I realized at this time what it means: plain and plain is happiness!
