Traditional Yellow Sugar Tofu Flower

Wash the soybeans and soak for more than 6 hours

Prepare 2500 grams of water. (Among them, 2000 grams of squeezed soy milk, 500 grams of boiled sugar water.)

Put an appropriate amount of soybeans into the soymilk machine, add an appropriate amount of water, and beat the soymilk. (Usually I add 3 tablespoons of beans, 1 bowl of water, and soy milk.)

Filter the beaten soy milk 3 times. (Every time there is bean dregs)

Boil the soy milk on high heat for 3 minutes and then turn off the heat

Get rid of the floating foam

Pour the internal fat into a bowl, add an appropriate amount of cold water to dissolve

Pour the melted internal fat into the freshly boiled soy milk

After stirring for 2 seconds, close the lid and let stand for 15 minutes

Boil the sugar into syrup

15 minutes later, it solidified

Put the tofu flower into a bowl and add sugar water.

Add dried osmanthus to decorate
Tips:
1. The ratio of beans to water is 1:10, so it can't be thinned any more, it can't be solidified if it's too thin;
2. The beans should be soaked thoroughly to make the soy milk more delicate and taste better;
3. The internal fat must be accurate, if it is too much, it will be sour, if it is not, it will not solidify;
4. Filter the beaten soy milk several times, the tofu flower will be smoother.
