Tremella and Mung Bean Soup

Soak mung beans and white fungus in water for 30 minutes.

Wash and chop the soaked white fungus.
3.
Add cold water to the soup pot and add mung beans and white fungus.

Cover and bring to a boil over medium-low heat and simmer for 40 minutes.

Mung beans and white fungus are cooked,

Add rock sugar and cook until it melts and turn off the heat.
Tips:
Mung beans are easier to boil when soaked.
Shredded white fungus is also easier to cook until soft.
The trick for mung bean soup to not change color: Put the mung beans into the pot with cold water, cover and cook until cooked, boil over high heat and simmer until cooked, so that the mung bean soup will not change color.
