1. Sprinkle salt on the eggplant and drain the water.
2. Cut the bell pepper into pieces and the onion into pieces and set aside.
3. Pour oil in the enamel pot, add onions and fry them to create a fragrance.
4. Add the drained eggplant.
5. Add string beans one by one.
6. Add bell pepper and stir fry.
7. Stir well, add the sausage and stir fry.
8. Cover the pot and simmer for ten minutes on medium-low heat. Add salt and pepper according to your taste before serving.
