Truffle Chocolate Cake
1.
Put the butter in a container and melt it with hot water (or heat it in the microwave for about 20 seconds to melt), then add the chopped dark chocolate, stir until the chocolate is completely melted, and let it dry until the temperature is about 50 degrees; preheat the oven 180 degrees; mix the egg yolk and 20 grams of sugar, add the melted butter and chocolate liquid, stir well, add brandy and fresh cream and mix well
2.
Sift in low-gluten flour and cocoa powder and mix into a batter for later use; add sugar to the egg whites two or three times, and beat with a whisk until the texture is firm and fine. The texture is clear and rigid; add the egg whites to the chocolate twice In the batter, stir evenly with a rubber spatula and pour it into the mold, and smooth it slightly
3.
Put it in the middle and lower layer of the oven and bake for about 50 minutes.
4.
After it is out of the oven, let it cool and then demould, apply a layer of whipped cream on the surface, and then sift the cocoa powder and place the chocolate crumbs for decoration

Tips:
The whipped cream for garnish can be simply whipped to a thick state, and the application is very random and does not need to be neat.
