The pig's feet in my hometown are usually smoked with fire, then covered with salt and hung to air dry, which is easy to preserve and has a good flavor.

Cut the pig's feet into small pieces, blanch the water to remove the peculiar smell

After blanching the water, remove the excess water

Cut lotus root into hob pieces, prepare ginger, spring onion and star anise

Warm oil in a pan, sauté star anise, ginger and shallots

Pour in the pork knuckles and stir fry to taste, add light soy sauce and stir fry

Pour into the rice cooker, add lotus root and green onion to start stewing

Tips:
The lotus root for the stew soup must be nine-section red lotus root, this will be stewed, and the white lotus root can only be used for frying, not easy to stew.
