Scrub the crabs and tie them with string. (The string is tied to keep the crab claws from falling off during cooking)

Cut the green onion into sections, and slice the ginger for later use.

Put oil in the pot, use a little more than when cooking, and heat it to 60% hot.

Add the green onion ginger and peppercorns and sauté until fragrant.

Put the crab shell face down into the pot. (The crab shell faces down to ensure the color of the crab shell is red and bright)

Add a spoonful of sugar.

Add light soy sauce.

Add in hot water without the crab shells and bring to a boil.

Turn down the heat, cover the pot, and simmer for about 15 minutes. (Time depends on the size of the crab)

The soup can be cooked out of the pot after about five minutes after the high heat.
