Prepare seasoning (red fermented bean curd sweet noodle sauce, rock sugar, ginger, spring onion rice wine)

Crush the fermented bean curd, add the sweet noodle sauce and mix well

Wash the duck legs in a pot under cold water, blanch them, and rinse

Add duck legs in a non-stick pan and fry over low heat until both sides are slightly yellow

Add ginger to burst the fragrance

Add rice wine and stir fry evenly

Pour the adjusted fermented bean curd sauce and stir-fry until the duck legs are all sticking to the sauce

Add boiling water and rock sugar along the side of the pot

Cover with high heat and cook for 5 minutes, then turn to low heat for 35 minutes

Then open the lid and turn to high heat to collect the juice and it will be out of the pot. You can leave a little soup when collecting the juice.
