The taboo of eating toon: the general population can eat toon. However, toona sinensis is a hairy substance, and eating can easily induce the recurrence of chronic diseases. Therefore, patients with chronic diseases should eat less or not.
Toona sinensis contains nitrate and nitrite, and the content is much higher than that of ordinary vegetables; while the protein content of toona sinensis is higher than that of ordinary vegetables, and there is a risk of generating carcinogens nitrosamines. Therefore, eating toona sinensis has potential safety hazards. The following principles should be followed. :
①Choose the tenderest toon bud. The more tender the toon bud is and the less nitrate there is, the less nitrite will be produced in the future storage.
②Choose the freshest toon bud. After mid-April, although the nitrate content in the toon bud has increased, the nitrite content is still low. Therefore, if you eat fresh toon sprouts, it will not cause the problem of nitrite poisoning. It is safe to eat freshly picked toon sprouts from the tree immediately, while the nitrite content of the toon sprouts purchased from the market has been greatly increased because of the transportation process. If it is time for the leaves to fall off with the touch, a large amount of nitrite will inevitably be produced.
③Scalding to remove nitrate and nitrite If the toon sprouts are not fresh enough, but the aroma is still there, it is a pity to throw it away, so you might as well blanch it. Blanching in boiling water for about 1 minute can remove more than two-thirds of nitrite and nitrate, and at the same time, it can better preserve the green color of toon. Whether it is cold salad, stir-fry or fried toon fish, you may wish to blanch it first, which can greatly improve the safety of eating toon. Since the aroma components of toon are mainly derived from essential oils, which are insoluble in water, blanching will not significantly affect the flavor of the dishes.
④ Blanch it before quick freezing. Toon is a seasonal vegetable. Many people like to freeze it and store it on an anniversary. However, toon must be blanched before quick freezing. After being blanched for 50 seconds and then frozen, not only the safety is greatly improved, but the vitamin C is also better preserved. After blanching, put it in a sealed plastic bag and put it in the quick-freezing compartment of the refrigerator. It can be stored for more than 1 month, keeping the green and aromatic characteristics.
⑤ Pickling the chrysanthemum buds for a longer time. Many people like to salt toon for two or three days before eating. This is a very unsafe habit. After the toon is pickled, the nitrite content will rise rapidly, reaching a peak in three or four days (when the salt is added at 10-20%), and the content far exceeds the allowable standard. Pickling after blanching can greatly reduce the nitrate content, which reduces the risk of pickling toon, but the safest way is to pickle the blanched toon for one week, and then eat it after the nitrite content is reduced. Adding vitamin C, tea and other ingredients can reduce the nitrite content in pickling.
Finally, eat toon with vitamin C-rich foods. The vitamin C content of toon is higher than ordinary fruits and vegetables. If you can eat fresh toon, vitamin C can help block the formation of carcinogen nitrosamines. If the toon is not fresh enough, you might as well eat it with other fresh fruits and vegetables to avoid the hidden dangers of nitrite. Studies have shown that when the molar ratio of vitamin C and nitrite is 2:1, it can block the synthesis of carcinogens of nitrosamines.
