Add water to the boiling pot, add the cleaned pork belly, a few slices of ginger, and cooking wine to a boil on medium heat for about 15 minutes.

Sauerkraut is sliced vertically from the middle with a knife along the lines of the cabbage, and then cut horizontally into shreds, and then rinsed with clean water and dried.

Take out the pork belly and cut it into thin slices. My knife is so bad that I can only cut it like this.

Pour the boiled meat soup into a casserole, add the scattered sauerkraut, add pepper, star anise, a little soy sauce, and some salt.

Place the sliced pork belly on top of the sauerkraut, boil on high heat, and simmer for 40-50 minutes on low heat.

After cooking, sprinkle a little white pepper, then sprinkle in chopped green onion.

When eating pork belly, you can mix it with a garlic dipping sauce, garlic + light soy sauce + balsamic vinegar + chili oil + a little sugar

Tips:
1. It would be more delicious to add blood sausage, you can also add some vermicelli.
2. If you choose the fatter pork belly, it is sauerkraut boiled white pork, it depends on your personal taste.
