Two-color Taro Balls

Roast or steam the sweet potato and purple potato, use one each

Remove the skins of the sweet potatoes and purple potatoes while they are hot, and put them in small pots. This is the peeled purple potatoes

Use the back of a spoon to crush the purple sweet potato into a puree

Put the tapioca starch in several times, not all at once

Mix cassava flour and purple sweet potato evenly and knead it into a dough. If the purple sweet potato is dry, you can put some cold water in it.

The method of sweet potato dough and purple potato is the same, put them in a small pot and set aside.

Knead the purple sweet potato dough into strips

Then use a spatula to cut into small pieces

The cut purple potato balls are made into small balls. The same is true for sweet potatoes. The two colors of taro balls should be the same size.

Put an appropriate amount of water in the pot, and then boil the water to a boil

Put the two colors of taro balls into boiling water, and then gently push them with a spoon

Boil until the taro balls have all risen, add water again, and boil until the taro balls have all risen.

Tips:
1. If the purple sweet potato is dried, add a little less water. If you prefer a sweeter one, add a little sugar when mixing the noodles;
2. Tapioca starch should be added little by little until it can be mixed into dough;
3. Tapioca flour can be put on the panel so that it won't stick to your hands.
4. You can freeze raw taro balls if you can't eat so much at a time, and take them as you like.
