Two Proud Toasts

Ingredients: high-gluten flour, milk, butter, yeast, eggs, sugar, raisins, salt

Milk, sugar, eggs, put into the cook machine, turn on the 3rd gear, stir until the sugar melts, about 2 minutes

Add flour, yeast, low speed 3 speed kneading (too high and easy to spill)

After the non-stick bucket, add salt, butter, 3rd gear and pass for 5 minutes, then accelerate to 5th gear, and then mix the dough for 20 minutes. The whole process is about 40 minutes.

Knead to the stage where a strong transparent thin mold can be pulled out

Knead until the dough is smooth, put it in a basin

Cover with plastic wrap, put it in the preheated oven, and perform basic fermentation at a temperature of about 26°

Take out the dough and weigh it. Divide into 6 parts, each is about 160g

After rounding, cover with plastic wrap and let for 15 minutes

Take out a loose dough and roll it out. The blisters on the sides are patted off (the sides should be as big as the middle)

Do them one by one, cover with plastic wrap and let for about 15 minutes

Roll out the loose dough again, starting in the middle, going up and down

Put in what you like, raisins and the like. Roll up from top to bottom

Cover with plastic wrap, ferment at about 32 degrees, and ferment until it is nearly 9 minutes full. Press the surface with your fingers and it can rebound.

In this way, it’s the first time, so it’s not as good as fermentation.

Put it into the preheated oven, and bake at 160° for 20 minutes (according to personal oven settings) and bake to 15 minutes to see the color. For example, cover with tin foil after coloring, and bake for another 10 minutes. After cooling, release the mold.
