Ungrilled Eggplant

Ingredients: 1 round eggplant, 1 green pepper, 1 tomato, 2 soaked mushrooms

Seasoning: water for soaking mushrooms, cooking wine, vinegar, water starch, green onion, garlic slices, sugar, salt, monosodium glutamate and garlic

Peel the round eggplant (you can cut a little thicker to make a crispy eggplant skin without wasting), and cut into thick slices

Cut a flat blade with a width of about 2 to 3 mm on the cross section

Cut into pieces as shown

Then cut the diagonal slices as shown, one shallow and one deep, so that it is easy to cook and taste

Green peppers, tomatoes, shiitake mushrooms changed to knife

Add a little oil to the pan and fry the eggplant twice

Fry until transparent

Water starch thickens when the moisture becomes low
