Vegan & Gluten-free Banana Bread with Blueberry Frosting

Preheat the microwave to 180*C (160*C fan)/350*F.

Combine ground flaxseed and warm water in a small bowl to make flaxseed eggs. Set aside for 10-15 minutes. type.

Combine all the dry ingredients in a large bowl.

Pour in coconut oil, milk, vanilla extract and flax egg. Mix well.

Pour the mixture into a bread tin wrapped in oven paper (a 22×12 cm bread tin can be used) and bake for 60-70 minutes.

When the cake is baked, prepare the frosting-remove the solid part of the coconut milk and pour it into a large bowl. Add the maple syrup and stir for a few minutes until fluffy.

Add blueberry powder. Put it in the refrigerator until frosting.

After the cake is baked, make sure to cool completely before putting it in the refrigerator. If the cake fails to cool, the frosting will melt.
