The protein content of whitebait is 72.1%, the amino acid content is also quite rich, and the nutritional value is extremely high. It has the functions of nourishing the kidney and increasing yang, dispelling deficiency and promoting blood circulation, replenishing the spleen and moisturizing the lungs. It is a superior nourishing tonic.

I always made whitebait custard for Manbao before. This time I made the staple food, vegetables and whitebait together. It can be eaten as a meal, which is rich in nutrition.

Soba noodles are used because only this one is left at home, and it can be replaced with other noodles.

Vegetable Whitebait Steamed Egg

1. Prepare all the ingredients, choose a larger egg, cook the soba in advance, and blanch the carrots and broccoli.

2. Cut the noodles into small pieces, not too crushed.

3. Broccoli and carrots are finely chopped (you only need a little bit, or you can replace it with other vegetables)

4. Beat the eggs, add a small amount of warm water, and stir into egg liquid.

5. Divide it into two parts, pour a little egg liquid into the soba noodles, and pour most of the rest into the whitebait. (This makes the finished product beautiful, if you don’t care, you can just put it in a big bowl.)

6. Sprinkle a little salt to improve the flavor.

7. Put the soba noodles in a container, spread the soba noodles on the lower layer, and drizzle the whitebait egg liquid on the top.

8. Steam on the pot for about 8 minutes.

9. Drizzle a little sesame oil after it is out of the pot, it tastes better.

10. One spoon, enough ingredients, rich in nutrition.

Tips:

After the noodles are cooked, it is better to put cold water in it, which is more vigorous. Don't cut too much, just keep fingers wide.
