Vegetarian Fried Eggplant

Three eggplants, one green pepper, one garlic, and one green onion.

First, wash the eggplants and cut them into hob pieces, rinse them with water and set aside.

Prepare other ingredients.

Heat in a pan and add some oil to sauté the chopped green onion and garlic slices.

Add eggplant and stir fry.

Add some oyster sauce and stir fry until fragrant.

Cover and simmer for two minutes (add some water if it is dry) because it shouldn't be too dry after dicing.

After the soup is finished, add green pepper, salt, and all-spice powder and stir fry evenly.
9.
The vegetarian fried eggplant is light, nutritious and delicious.
