Vegetarian Stir-fried Double Melon and Carrot

Remove the flesh of the double melon, wash and slice.

A small piece of carrot removes the core slices in the middle.

Add a little bit of salt to blanch the bitter gourd in boiling water, remove the cucumber slices after passing the cold water, and then submerge 3 tablespoons of salt for more than 20 minutes.

After the double melon is submerged, soak it in clean water for a while to squeeze out the moisture, bitterness and saltiness.

After the oil is hot, add carrot slices, then add hang peppers, and finally add chopped green onion until fragrant.

Put the double melons and stir fry over high heat, add a little salt and chicken essence to the pan.
Tips:
1. When the blanched bitter gourd is soaked in clean water, use your hands to dry the water and put it in the water. Repeat the bitterness and saltiness several times to get out.
