Warm Winter Chicken Soup

Prepare ingredients. The old hen is thawed ahead of time and then cleaned up. I take the chicken fat aside, don’t throw it away, it can also be used to make an old hen fried chicken fat

Put a few slices of ginger, put the ingredients in a basin, prepare superheated water, and get rid of the fishy.

Pour a pot of boiling water and roll the old hen to remove the fishy smell. Add more water to the stew.

Put the ingredients into the casserole with tongs and boil on high heat.

Use a spoon to skim off the foam. The part of the water added in the previous step will be consumed here.

After the high heat is boiled, change to a low heat, and simmer until the chopsticks can easily pierce the chicken body to turn off the heat. Chicken fat is relatively hot, so be careful to burn your tongue when drinking soup.
Tips:
Our old method is to stew the old hen directly in clear soup, but my husband is too fishy, and occasionally I saw a food show that said to boil a pot of boiling water, which is similar to the method of removing the flesh and bones and blood.
