Winter Melon Duck Frame Soup
1.
Remove the roast duck and leave the duck rack.
2.
Put about 800ml of water in the soup pot, put it into the duck rack (it can be cut into small pieces, I put it directly in the pot), cover the pot and set it on high heat. After the water is boiled, change to a medium-low heat and simmer.
3.
About 200 grams of fresh winter melon.
4.
Wash the wax gourd and cut into pieces. (Children come home, the skin and seeds of winter melon are cut off) Do not peel and remove the seeds of winter melon in soup, because winter melon skin is diuretic and swelling. It is used for edema and swelling, poor urination, hot and thirsty, and short urine. Winter melon seeds have the effects of clearing away heat, resolving phlegm, eliminating carbuncle and thickening, and dampness.
5.
Put the winter melon in the pot, simmer for 3 minutes on high heat, add a little salt, and simmer on medium heat for 5-10 minutes.
6.
Turn off the heat and transfer to the soup bowl. It would be better to sprinkle some coriander on it~ (Unfortunately, kids don't eat coriander).
Tips:
Duck racks can be bought with roast duck racks.
Raw ducks are fine too.
Soak the duck rack to remove the blood before boiling the soup.
