Winter Melon Duck Soup

Ingredients: duck legs, winter melon duck legs soak in cold water for more than 2 hours to remove blood, change the water several times in the middle, wash the winter melon and set aside

Cut the cleaned duck legs into small pieces

Cut the winter melon with the skin into small pieces, soak it in salt water for 5-8 minutes when washing it, rinse it and set aside

The ingredients are very simple, a few slices of ginger, 2 slices of hawthorn to remove the smell, a little green onion

Put the chopped duck pieces into a pot of cold water and boil for about 3 minutes, blanch one side, pick up the blanched duck pieces and rinse the blood foam for later use

Put water in a casserole, add duck cubes, green onions, ginger slices, and hawthorn slices to a boil. Turn to low heat and simmer for 1 hour and 20 minutes. It is best to use mineral water or purified water. The stewed soup is more delicious

After 1 hour and 20 minutes, add the pieces of winter melon and simmer for 30 minutes and 30 minutes, then add a little fresh milk, and simmer for another 10 minutes

Add some salt to taste when starting the pan

You can add a little coriander to enhance the flavor. Although winter melon soup is often used, the soup is really fresh with a little milk.
Tips:
The milk should not be simmered slowly throughout the whole process
