Winter Tonic---turtle Hen Soup

Kill the soft-shelled turtle, wash, chop into pieces, and chop the old hen into large pieces.

Put water in the pot and blanch the chicken in it.

Boil the turtle in boiling water for later use.

Wash the blanched chicken and turtle together and put them in a casserole.

Add red dates, wolfberry, angelica, astragalus, green onions, ginger.

Bring to a boil with high fire, skimming the floating end.

Change to low heat and simmer for about 1 and a half hours. The soup will be thick and the meat will be rotten. Add salt and season with chicken essence.
