With A Refreshing Taste --- French Kiwi Jam
1.
Wash and peel the kiwi fruit, cut into small pieces,
2.
Put it in a milk pan, sprinkle with sugar and marinate for two hours;
3.
Soak the fresh mint leaves in clean water with a little salt in the water;
4.
Remove after soaking and chop;
5.
Prepare maltose, lemon juice, and rum;
6.
The kiwi fruit that has been pickled for two hours has already begun to show water, and most of the sugar has melted.
7.
Bring to heat, simmer slowly, add lemon juice after 15 minutes;
8.
Continue to simmer on low heat. When the jam is very viscous, add maltose and stir evenly.
9.
Then add rum and continue to simmer until the smell of wine disappears;
10.
Add chopped mint leaves, stir well, remove from heat and let cool,
11.
Bottle and seal, keep in refrigerator;
12.
Put the mint in the jam, just stir it evenly, no need to boil it; it has the coolness of mint when it is eaten, and it tastes great when it is spread on the white toast;
