Xinping is an autonomous county of Yi and Dai in Yunnan. There are 17 ethnic groups including Yi, Dai, Hani, Lahu, Hui, Bai, Miao, Han, etc., with unique ethnic customs and attractive special flavors. The Xinping Dai people are commonly known as Huayao Dais because they use Changzhangyu's special colored woven cotton tape to wrap around a skirt with a multi-flowered waist that is about one foot wide.

Xinping pickled vegetables are very famous in Yunnan. Almost every vegetable market in Kunming will have stalls selling Xinping pickles. On weekends, I went to Dongsi Street. It has recently become a New Year’s Day Street, where there are a lot of food. Seeing Xinping pickles, it’s delicious!

Bought some home to make sauerkraut fish. The authentic Sichuan sauerkraut fish uses kimchi, and I use pickled vegetables. The ingredients are leftovers from the house, so I have to eat it quickly, so I cooked it in. "

Ingredients

Xinping Pickled Fish

1. 1 grass carp.

2. 3 taels of fresh pickles.

3. Side dishes: tofu, tomatoes, potatoes, carrots.

4. Ingredients: chives and parsley.

5. Ingredients: Ginger, Biao, Millet Spicy.

6. Cut the pickled vegetables into pieces and fry them in a frying pan.

7. Put water in the pan of fried pickles.

8. Put in the fish cubes.

9. Put on the side dishes and cook for about 5 minutes.

10. Lift the pot into the soup pot.

11. Top with chives, coriander and spicy millet.

12. Sprinkle with fired chili and dipped chili, sesame, and Chinese pepper.

13. Boil another part of oil in the wok, pour it on top, and let out the fragrance.
