Yam and Winter Melon Duck Frame Soup

Remove the excess duck fat and duck tip from the duck rack and chop it into pieces for later use.

The yam is peeled and cut into pieces with a hob. It is best to wear gloves, otherwise it will itch for a long time. Soak in clean water for later use.

Cut the green onion into sections, slice the ginger, and set aside.

Put a small amount of oil in the pot, sauté the onion and ginger, add the duck rack and stir fry for a while.

Transfer to a casserole, add hot water to cover the duck rack, bring to a boil and simmer for half an hour. Be sure to add enough water to avoid adding water midway.

Add winter melon and yam and continue to simmer for 20 minutes.
