Yam Strawberry Daifuku

1. Peel the iron yam and steam it in a pot.

2. Take 250g of yam and put it in a fresh-keeping bag, use a rolling pin to press it into puree or directly use a knife to press it on the chopping board to make mud or pinch it by hand. According to personal taste, add the right amount of sugar.

3. If you like to have a delicate taste, you can sift the yam puree. 250g can make 10 in theory, but it is not enough after sieving.

4. One kind is sieved, the other is not sieved, the appearance is still quite obvious. Divide the yam mud evenly into 25 grams of medicament, and knead them into balls.

5. Divide the red bean paste into 10 grams each and roll them into small balls.

6. Choose 9 small strawberries that are evenly distributed, remove the pedicles, clean them, and use paper towels to absorb the surface moisture.

7. Take a portion of red bean paste and place it on the plastic wrap. Put a layer of plastic wrap on it and press it into a bean paste skin. Put a strawberry on top and carefully wrap it with the cling film.

8. Wrap everything and use plastic wrap.

9. Take a portion of yam puree, flatten it with plastic wrap, and put in the bean paste balls just wrapped.

10. The yam has no elasticity, so be careful, and round it after wrapping.

11. Roll in the coconut paste.
