Yam Yolk Puree

Peel the yam.

Steam on high heat for 20 minutes.

Put the eggs into the pot with cold water.

Boil the water for another 4 minutes, turn off the heat and simmer for 5 minutes.

Put the eggs in cold boiling water.
6.
Peel off the shell and remove the egg whites.
7.
Put the yam, egg yolks, and 90 ml of warm water into the food processor and beat them into juice.
8.
Finely chop the egg yolk and sprinkle on it.
