Yellow Croaker Wonton

Clean the fresh yellow croaker, first use a knife to chop off the head and belly

Then use a knife along the middle bone to remove the 2 pieces of meat from the spine. Use a knife to scrape off the fish on the spine, and the meat on the bones is also scraped off.

This is about 150 grams of scraped fish paste, add appropriate amount of mashed meat and diced bamboo shoots

Add cooking wine, ginger juice, add some salt, sugar

Add pepper, sesame oil, chopped green onion, and mix well

Take a piece of wonton wrapper you bought, put an appropriate amount of filling, and wrap the edge of the wonton wrapper with water. The amount of filling is 20 pieces, this is best to be eaten right now!

Stir the garlic and ginger in a frying pan, add the remaining fish bones and stir fry

Add some cooking wine and some warm water

After the soup is boiled, turn to medium-low heat and simmer until the soup is whitish, add a little salt and pepper, and cook.

A bowl of stock is finished, add water to the spare pot and boil

Put the wontons and boil, add some cold water to boil them until they float on the surface of the water, then the wontons can be taken out and put in the soup bowl, sprinkle some chopped green onion, or add some chopped green mustard.
Tips:
The small yellow croaker is best fresh, and it's best to eat it now, don't put it in the refrigerator!
