Yellow Peach Mousse Cake

Bake an 8-inch chiffon cake in advance.

Then cut the cake into 3 pieces, only 2 pieces are used here, and then cut off the edges of these 2 pieces about 1 cm.

Take 3 slices of fish film, soak it in cold water, pour out the cold water after the soaking is soft, add about 100g of water in the canned yellow peach, put it in the microwave and heat for 30 seconds and take it out to become a melt

4 slices of yellow peaches, add 2 tablespoons of canned water and stir into yellow peach puree

Then pour the melted fish glue into the yellow peach puree and stir evenly

Add whipped cream to 45g of powdered sugar and beat until 6-7 minutes

Pour the yellow peach puree with isinglass liquid into the whipped cream

Stir evenly with a whisk, it becomes a yellow peach mousse liquid

Spread a cut cake slice into an 8-inch cake mold

Then pour half of the yellow peach mousse liquid, and then put it in the refrigerator to cool down, let it solidify before putting on the second slice

Pour in the remaining yellow peach mousse

Then seal it with plastic wrap and put it in the refrigerator for 3 hours

Finally, prepare to make mirror pectin, then take a piece of fish film and break it into pieces, soak in cold water, add canned water into the microwave and heat it into a liquid state.

Slice the yellow peaches for later use.

Take the cake out of the refrigerator, put the yellow peaches on the cake, and put silver sugar beads on it

When the isinglass is cooled to about 30 degrees, pour it on top of the cake, and then put it in the refrigerator for 1 hour to make it!
Tips:
1. The canned yellow peach that I bought is 850g, and there are about 8,9 yellow peaches in it, which is one more slice to make a complete cake!
2. If the mousse becomes too thick during the re-operation, it can be heated and stirred in warm water, and it will become thin and soft!
3. When making the mirror at the end, the isinglass solution should be cooled by 30 degrees and then poured in!
4. When the finished mousse cake is unmolded, put a hot towel around the mold and it will be easy to take out!
