Yogurt Old Bread
1.
Put the old noodles in the bread machine for a kneading process, and ferment to 3 times the size.
2.
There is an obvious honeycomb mesh inside.
3.
In addition to the butter, put all the ingredients of the main dough together with the old noodles torn into small pieces into the bread machine, knead the dough for 15 minutes, press the stop button, add the softened butter, and restart the kneading process until it is complete. (My bread machine kneaded the dough for 30 minutes, for a total of 45 minutes.)
4.
The kneaded dough can be easily pulled out of the glove film. (You must knead out the film to make the bread, so that the bread will be soft.)
5.
Fermented to twice the size, dip your fingers in flour and insert it into the dough, pull it out without collapsing or shrinking.
6.
Take out the dough, press and exhaust, divide it into 12 equal portions, each about 102 grams, cover with plastic wrap, and relax for 15-20 minutes. (My amount is 1.5 times the formula. According to the formula, it can be divided into 8-9 equal parts.)
7.
Take a dough and roll it into a strip.
8.
Roll it into a long strip and pinch tightly.
9.
Rub into a long strip and fold it in half. As shown in the figure.
10.
Twist a few times like twisting.
11.
Bend over and go up from the bottom of the small circle.
12.
Arrange on the baking tray.
13.
Ferment for the second time to 1.5-2 times the size, brush with egg liquid and sprinkle with sesame seeds.
14.
Put it in the preheated oven and bake at 340F/170C for 20 minutes.
15.
Take it out after baking.
16.
Let cool on the grill.
17.
Very soft and brushed.
