Yutu Snow Mooncake
1.
Add glutinous rice flour to a pot on medium-low heat and stir-fry until it turns slightly yellow. Set aside.
2.
Add 100g water and 10g oil to the pot and bring to a boil in a large bowl.
3.
Add ice powder and stir to form a dough.
4.
Knead until smooth, cover or seal with plastic wrap and let stand for 20 minutes.
5.
Divide the mooncake filling and snowy flour into each, one for 10g mooncake filling and one for 30g snowy flour.
6.
Take a piece of snowy dough, roll it into a ball, stick a little glutinous rice flour and round it, and press it with both hands into small round pieces.
7.
Take a portion of white kidney bean filling and wrap it in the ice crust
8.
Tighten the tiger's mouth and slowly push up the skin from the bottom to completely enclose the filling.
9.
The wrapped snowy mooncake will be pinched tightly.
10.
Squeeze the wrapped ball into a mouse shape with the tip of the front and round the back.
11.
Cut out two small ears on the surface of the head with scissors, and the prototype will be there.
12.
Use a little bit of hydration to dissolve the red yeast rice powder. Use chopsticks to rub and dip a little bit to make the rabbit's eyes (note that the eyes are separated a little bit, the smaller ones are more similar).
Tips:
1. The oil used in the recipe can be corn oil and white oil. Other rapeseed oil or oil with special taste and color cannot be used, which will affect the taste of the finished product.
2. It is best to use lighter fillings for fillings, and the best finished products will be white.
3. Different moon cake powders will have different water ratios. Please refer to the recipe for specific details.
4. Put the snowy mooncakes in the refrigerator to taste even better.
