1. Old noodles: all the ingredients are stirred with a chef machine at slow speed 4 for 3 minutes, and fast at 7 speeds for 2 minutes. After removing it, seal it with plastic wrap, refrigerate and ferment overnight, and set aside

2. Scalding: boil the water, then flush the water into all the ingredients of the old noodles, stir quickly at 7 levels for 2-3 minutes, and cook the noodles. After cooling, put them in the refrigerator for storage.

Turn to high-speed mixing for 3 minutes until the smooth glove film or stretched surface is elastic like a rubber band (fully expanded state) (time is for reference only).

5. The first fermentation: the temperature is 28 degrees, the humidity is 75%, and the basic fermentation is sealed for 40 minutes;
Divide and cut into 140g/ball round, seal and relax for 20 minutes.

6. Shaping, roll the dragon fruit dough long, wrap it with red beans/filling, roll it into a strip, and then roll it into a pattern.

7. The second fermentation: 28 degrees, 85% humidity, about 60 minutes;
After fermentation, decorate, use paper strips as a powder object to put on the fermented bread, and sprinkle the pattern with flour.

8. The upper heat is 220 degrees, the lower heat is 160 degrees, and the slate is baked directly, steam for 3 seconds, and bake for about 12-15 minutes (if the upper and lower fires cannot be adjusted separately, use 180-190 degrees, the slate/steam can not be used)
