#aca Baking Star Contest#——salt Bread
1.
Prepare ingredients
2.
Put 190 grams of high-gluten flour, 60 grams of plain flour, 3 grams of high sugar-tolerant yeast, 15 grams of sugar, 1 gram of salt, 40 grams of eggs, 110 grams of water, and 25 grams of light cream into the inner tank of the cook machine.
3.
Kneading the noodles with the second gear of the chef machine
4.
Then add 15 grams of butter in the second block and continue to knead for 7 minutes until the dough can stretch out a large piece of film.
5.
Put the dough into a circle and cover it with a damp cloth for the first fermentation.
6.
When the dough is fermented until the dough is obviously grown, poke a hole with your fingers in the dry powder and do not rebound, indicating that the fermentation is good.
7.
Divide the fermented dough into ten equal parts, knead and vent and relax for 10 minutes (15 minutes if it is cold)
8.
Roll the loosened dough into an oval shape
9.
After turning it over, fold the two sides inward into a sharp drop shape, and let it rest for 8 minutes.
10.
Roll out the loosened dough and spread it with 10 grams of salted butter
11.
Roll up from top to bottom, roll up ten of them, arrange the dough on a baking sheet with the mouth down, cover with plastic wrap and place it in a warm place for secondary fermentation.
12.
After the second fermentation, the egg-brushing liquid with a uniform surface is obviously grown
13.
Use a grinding bottle to grind Shanghai salt, preferably coarser.
14.
Put it in the middle layer of the oven preheated at 180 degrees and bake for 15 minutes to color it.
15.
After baking, take it out in time and put it on the grilling net to cool and airtightly store.
Tips:
1. The secondary fermentation temperature should not be too high, otherwise the sandwich butter will melt.
2. Because the butter melts during baking, it is normal for the finished product to have hollows and flattened shapes, so you don't need to be too entangled and perfect.
3The original recipe used flaky sea salt, which I didn’t buy, so I used coarse salt ground in a grinder.
4 I have slightly changed the original formula, so if you want to learn it, you can go to the blog of Liberty Sister.
